Title: Baked Tomatoes with Orzo and Olives
Categories: Vegetable Vegetarian Appetizer
Yield: 8 Servings

4lgTomatoes, halved, hollowed
3cCooked orzo
1/4cOlives chopped
1tsGarlic, finely minced
3tbBasil, or parsley chopped
3tsPine nuts toasted
1tbOlive oil
1/4cParmesan cheese

Preheat oven to 350 degrees or grill Halve and hollow tomatoes, place in a baking dish. Mix the rest of the ingredients except the cheese together in a small bowl and season with salt and pepper to taste. Carefully stuff the tomatoes and sprinkle with cheese. Bake for 20 minutes and serve.
